7% alc/vol. Bottle conditioned. Age at release 2 years in fermenter and puncheon, and 7 months in bottle. Nano batch 1,000 litres. Vegan. Label art: Eliza Baster.

A Barrel-aged mixed fermentation saison, initially fermented with French saison yeast, pumped into two oak puncheons with Liège sirop (Flemish syrup made from pear and apple), and Brettanomyces, Pediococcus, and Lactobacillus, for 18 months.  Rich and tangy with a slight sweetness, fennel, pear and big oak.
